Croissant Replicas for a Cafe
Client Overview
The cafe is located in the city centre, on a busy street where tourists and local residents pass by throughout the day. Several other cafes and restaurants operate nearby.
Tasks and Problems
The cafe works in two formats. A croissant taken away is served plain; the same croissant eaten at a table comes plated with toppings, costs more and is usually ordered with a drink. The goal was to move part of the takeaway guests to the tables and raise the average check that way. The client chose the refrigerated display case in the room, near the entrance, as the place to show the difference.
Our Solution: Croissant Replicas Inside a Refrigerated Display Case
To increase the flow from the street, Nippon Dom recommended building the display in the window: it is large enough to hold the full set and would be seen by passers-by. The client declined, placed the replicas in the refrigerated case in the room and also chose to go without lighting and without price tags.
The set of seven custom-made croissant replicas was built for this specific menu rather than picked from a catalogue: each piece reproduces the plated version with topping and sauce, not the plain takeaway one — exactly the difference the case had to sell.
Result
The client is fully satisfied with the result: after the croissant replicas went into the case the tables are busier and the average check has grown. The potential is higher than that — display lighting turns replicas that are merely visible into appetising ones, price tags remove the guest’s last hesitation, and a window display would work on passers-by rather than only on those already inside.
