A Georgian Kitchen Inside Sochi's Largest Mall
Hochupuri is a georgian restaurant inside MoreMall, the largest shopping and entertainment centre in Sochi.
Sochi is a Black Sea resort with tourist traffic all year round. The mall is where local shoppers and holidaymakers cross paths.
The kitchen is built around freshly baked khachapuri, khinkali, grilled dishes and georgian wine.
Guests Don't Order What They Can't Picture
Most of the mall’s foot traffic is tourists. Many of them do not know georgian cuisine and cannot tell what a dish is from its name alone.
Waiters had to explain the contents of every item on the paper menu, guest after guest.
The restaurant decided to fill its window with food replicas — to catch the attention of shoppers walking past and to show the menu instead of describing it.
Moulds Taken Straight From Real Dishes
Unlike sushi or bento, georgian cuisine is not part of the daily repertoire of japanese craftsmen.
The client sent reference photos and the exact size of every ingredient. A chef cooked each dish to match, and the craftsmen took moulds directly from the real food. That is where the accuracy of these georgian cuisine food replicas comes from, and how every custom food replica is made when the cuisine is new to the workshop.
The shape and colour of the tableware were not critical for the client, so the plates were selected and approved together with the restaurant.
Nippon Dom produced six replicas for the restaurant window display. The centrepiece is the Imeretian khachapuri, built as if caught in motion — one slice lifted, imitation cheese stretching at the sides. Shoppers come up to the window to work out how a slice can hang in mid-air. Surprise is what holds attention; stretching cheese is what makes people want to taste it straight away.
