The cafe serves sushi rolls, bento sets, salads and a dedicated kids menu for travelers passing through one of the main air gateways of the Russian Far East. Sakhalin has a strong historical and culinary connection to Japan, which makes japanese food a natural choice for the local airport audience.
The Challenge: Standing Out on a Busy Airport Food Court
Bento Maru shares the food court with several competing cafes, and the team faced four connected business challenges. First, travelers unfamiliar with japanese cuisine often hesitated to order and walked to more recognizable options nearby. Second, passengers at the airport are always in a hurry — every minute spent reading a menu is a minute lost, and slow decision-making at the counter pushed customers away. Third, the kitchen team needed a clear visual standard for plating, since dishes were not always served the way they appeared on photos. Finally, the cafe needed a strong visual identity that would compete with neighbouring food court tenants from a distance.
The Solution: 15 Japanese Cuisine Replicas as a Visual Sales Tool
Nippon Dom produced a complete set of 15 japanese cuisine replicas for food court display, covering every category on the Bento Maru menu. The lineup includes four signature bento sets, three sushi and roll selections, three salads, two kids sets and two snacks.
The order presented no technical difficulties — all dishes are part of the daily vocabulary of japanese craftsmen, so the team focused on plating accuracy to match the actual dishes served at Bento Maru.
The Result
The replicas were completed and shipped to Yuzhno-Sakhalinsk airport in April 2026. Bento Maru ordered more replicas than the current display can fit — the client is preparing to expand the showcase to accommodate the full set. Once the new display is installed, we will add the client’s feedback on the impact on sales and customer flow at the food court.
